Italian-style dry salami or "salametti secchi" made by people who've been doing this since 1896 is the best!  San Francisco's Molinari & Sons is a 4th generation company of sausage makers, starting with P.G. Molinari, from the Piedmont region of Italy, when he first moved to California.  

Finely minced pork is mixed with salt, garlic and other ingredients, placed in E-Z peel casings, and ready for you to eat!
